miàn jīn
亦作面斤。亦作面筋。食品名。用面粉加水拌和，洗去其中所含的淀粉，剩下凝结成团的混合蛋白质就是面筋。一种食品。小麦粉和著水以洗去淀粉，剩下的蛋白质凝结成团者，称为「面筋」。
俺前日听见说，荀家炒了些面筋，豆腐干送在庵里，又送了几回馒头，火烧。
